A cocktail that changes color? 🍸🔵➡️🩷

We’re making a butterfly pea flower cocktail that puts chemistry right in your glass.

Butterfly pea flowers contain natural pigments called anthocyanins that act as a pH indicator. Add acidic lemon juice, and watch the drink transform from purple to a vibrant pink. 🧪

Then add gin, elderflower liqueur, ice, and a splash of prosecco—and you’ve got yourself a color-changing cocktail.

Want to know why the chemistry works? Watch the full Color Changing Cocktails episode of Chemists in the Kitchen.
