ANSETT CHEFS STRIKE GOLD

ANSETT AUSTRALIA'S Brisbane Executive Chef, Georges Auclair believes the company's young apprentices and chefs should broaden their experiences by entering state and national competitions.

At the Professional Chefs and Cooks Association of Queensland annual Salon Cullinaire at Brisbane Exhibition Grounds, chefs from hotels and restaurants and the airlines each prepared a cold platter presentation for a three course meal.

To Georges' delight, Ansett entrants won two gold medals and a bronze medal. The Ansett award winners (far right) were (from left) Chef de Partie Marcus De Matista (bronze), Sous Chef Juerg Suter (gold) and Relieving Sous Chef Jasen Kang (gold).

On two subsequent visits to Brisbane the team of Margo McLeod (Brisbane=4th year), Shane Quinsey (Sydney-2nd), Damien Sharpe (Adel-2nd) and Jason Stephens (Melb-1st) were put through their paces by Brisbane coach Jasen Kang (Relieving Sous Chef) . . .

Elma. Part 1 of 2.

Elma Adams was one of the key figures in the ANA and Ansett ANA for over thirty years.

She began her long career in 1939, in charge of aircraft supplies. Her duties included ordering the food, drink and equipment for the aircraft (keeping the accountant upstairs informed), and issuing supplies from her store room to the hostesses prior to each flight. The hostesses would sign for their supplies and take them on board themselves.

Later Elma became a Ground Hostess. . . . .

ANSETT NEWS, No. 121 SEPTEMBER 1991.

ANSETT SMOKING BANS IN FORCE.

SMOKING WAS BANNED from all Ansett Australia Divisions, Departments, Airport and Retail work stations from August 26, 1991, with the exception of fully enclosed single occupant offices, where smoking is at the discretion of the occupant.

Ansett Australia General Manager Graeme McMahon said: "Smoking is widely claimed to be the number one preventable cause of premature death and disability in Australia. . . . .

Mr McMahon said: "Ansett recognises that no single course is suitable for all those wishing to quit, so it will be the employees' choice as to the method chosen (Quit course, medication, etc).

"We will reimburse costs to the value of $100 on a once only basis to staff who are successful . . . . ."

Matron's other assistant in 1939 was Phyllis Currie. Miss Currie, who had been in charge of operations up north, became Chief Hostess supervising the hostesses at Essendon. She was already an experience hostess when she was accepted by ANA, having flown with Airlines of Australia since 1937.

In December 1941, Phyl was involved with the evacuation of civilians from Port Moresby. She and Mary Carr looked after the women and children and the wounded soldiers, as they flew across five hundred and fifty miles of water to Cairns . . . . .

Captain Laurie Johnson, who was organiser of the airline's war operations, said 'the girls did a marvellous job, an incredible job. . .

A recent visitor to the museum was former Ansett Flight Attendant, Amanda MITCHELL (nee CROOK).

Amanda advised that her time as a Flight Attendant commenced in 1981 until 1983,
when she departed to start a family. Based in Brisbane Amanda described the years as a flight attendant most enjoyable and the years she was with 'Ansett' as "Good Times".

In 1885 Amanda joined the retail staff at Bob Ansett's, 'Budget-Rent-Car' business located at Brisbane Airport. This employment she enjoyed until 1988.

Currently Amanda and her partner are enjoying travelling around Australia and being in the area a trip to the museum was on Amanda's list of places to visit.

GOLDEN WING'S CELEBRATIONS.

COOLANGATTA GOLDEN WING celebrated its fifth year of operations last month (August 1991) by winning the Golden Wing Award for Excellence for achieving 148 per cent of its sales target for the past six months.

Golden Wing lounges are judged every six months on appearance, efficiency, letters of commendation and new members.

Lounge Manager, Lyndel Mates paid tribute to the dedication of staff members which resulted in the award win and a successful day of celebration.
