Movie Inspired Cookies
We went to see Wicked. It inspired me to make cookies.
1 (15.25 oz.) box white cake mix
2 large eggs, beaten
1/2 cup vegetable oil
Pink and Green Food coloring
Preheat oven to 375 degrees F. Line two large cookie sheets with parchment paper. Set aside.
In a medium bowl, add cake mix, eggs and oil. Stir until well combined. Place half of dough in a separate medium bowl. Stir in pink food coloring a few drops at time until desired color is reached. Repeat process with green food coloring with remaining dough.
Use a 1 tablespoon scoop. Scoop dough onto cookie sheets. Bake for 8 minutes. Remove from oven and cool completely. Makes approximately 24 cookies.
If desired, make Sandwich cookies. I made cream cheese buttercream.
1 (8 oz.) pkg. Cream cheese, softened
1/2 stick butter, softened
1 tsp vanilla extract
2 cups Confectioners sugar
In a medium bowl, add cream cheese and butter. Mix with an electric mixer until light and creamy. Add vanilla and Confectioners sugar. Beat until smooth. Spread or pipe between cookies that are cooled completely.
Store filled cookies in an airtight container in fridge.
