~Bluestone Lane Greens + Grains Bowl~
Salad:
1 cup baby kale
1 cup arugula
1/2 cup farro
1/3 cup white quinoa
1/3 cup edamame
1 cup roasted broccoli
1oz mixed herbs (dill, mint, parsley)
1oz chopped almonds to garnish

Sesame Ginger Dressing:
2 tablespoons sesame oil
2 tablespoons olive oil
2 tablespoons soy sauce
2-3 tablespoons of rice vinegar
1 tablespoon fresh minced ginger
1 clove minced garlic
1 tablespoon brown sugar

Steps:
Start by cooking the farro and quinoa separately (15 minutes or until soft).
Roast broccoli in the oven (7 minutes or until browned.
Add all green vegetables into a bowl and combine well (baby kale, arugula, roasted broccoli, edamame and mixed herbs).
Once cool, add farro and quinoa to the bowl and combine.
Drizzle sesame ginger dressing over and mix until evenly distributed (use extra dressing as the grains and vegetables absorb quite a bit).
Garnish with toasted/chopped almonds.
Bulk it up with a protein of your choice: Bluestone Lane recommends chicken or salmon.
Enjoy!

“It’s better than the playground!”
“I wish I could get one every day!”

There's still time to help the Museum bring more Wonderkits to children! Donate today before the campaign closes on Friday at midnight. nationalchildrensmuseum.org/wonderkit-campaign/
