ARKANSAS CAST IRON COOKING:
John Ragsdale demonstrates Dutch oven cooking at the Ozark Folk Center in Mountain View (Stone County); 1988. Note the hot coals on the ovens’ lids.

Campfire Cooking: For campfires, use a seasoned cast-iron Dutch oven with legs (a "camp oven"), placing hot coals on both the lid and beneath it for even baking.

A cast iron Dutch oven is a highly versatile, durable, and essential tool for searing, braising, baking (especially artisan bread), and stewing, owing to its superior heat retention and even heating capabilities. It is ideal for one-pot meals, allowing seamless transition from stovetop to oven. Essential techniques include using low-to-medium heat to avoid thermal shock, searing meat to build flavor, and keeping the lid on to lock in moisture.
