MILLS AND MILLING IN IOWA
Long before Iowa became known for endless fields of corn, its economy depended upon something far less predictable: moving water. The earliest settlers needed to turn the raw materials around them into the necessities of life. Trees had to become boards, while wheat and corn had to become flour and meal. Human and animal power could accomplish some of that work, but it was slow and exhausting. Wherever a stream offered enough current and fall, settlers saw the possibility of letting the water do the work. As a result, the mill was often among the first industries established in a new section of Iowa.
The earliest mills were frequently sawmills. Settlers found timber along Iowa’s rivers and streams, but trees were of little use for construction until they could be converted into lumber. Houses, barns, stores, bridges, churches, and schoolhouses all required boards. Once enough lumber had been produced to support local construction, many mill sites were expanded or converted to grind grain. In some places, the sawmill and gristmill operated together, allowing the same stream to provide both the boards that sheltered a family and the flour that fed it. By the 1850s, Iowa had approximately 540 sawmills and 333 flour and gristmills.
A successful mill required a dependable stream with enough water and sufficient drop to turn its machinery. Since Iowa is not an especially mountainous state, good locations were valuable. Mill owners often built dams from logs, brush, stone, and clay to raise the water level and create a stronger fall. The dam produced a millpond, while a millrace carried water toward the wheel or turbine. Water then set an entire collection of shafts, gears, belts, pulleys, elevators, sifters, and grinding machinery into motion. Grain commonly entered near the upper portion of the building and moved downward by gravity, which explains why so many gristmills were three or four stories tall.
Not every water wheel operated in the same manner. Undershot wheels were turned by water passing beneath them and could function where there was relatively little fall. Breast wheels and overshot wheels used the weight of water caught in buckets or pockets along the wheel. These were more efficient but usually required a dam or elevated race to deliver the water. By the middle of the nineteenth century, the great wooden wheels were increasingly replaced by smaller metal turbines. Turbines required less water, provided steadier power, and could sometimes continue operating beneath the frozen surface during winter.
The miller was one of the most important people in an early Iowa community. His work required mechanical knowledge, patience, and considerable skill. Millstones had to be regularly “dressed,” meaning their grooves were sharpened and deepened as they wore smooth. The distance between the stones also had to be adjusted according to what was being ground and how fine the finished product was supposed to be. If the stones ran too close together or too quickly, the resulting heat could damage the flour. A careless miller could ruin a farmer’s grain, while a skilled one could attract customers from miles away.
A trip to the mill was about more than flour. Farmers sometimes traveled an entire day to reach the nearest mill, only to find a line of wagons already waiting. Low water, broken equipment, or an overloaded mill could delay grinding for hours or even days. While they waited, people traded news, conducted business, and visited with neighbors. Blacksmith shops, stores, hotels, cooperages, and post offices frequently appeared near successful mills. Millponds became places for fishing, boating, skating, picnics, and cutting ice. In many instances, the mill did not merely serve the town. The town grew because the mill was already there.
Water power was useful, but it was never completely reliable. Drought could leave a mill idle, while floods could tear out a dam, destroy the millrace, carry away a wheel, or undermine the building. Winter ice might stop the machinery or batter it apart during a thaw. Fire was another constant danger in buildings filled with dry grain, flour dust, wooden equipment, and moving belts. Mill owners regularly repaired dams, replaced machinery, and rebuilt structures, knowing that one season of extreme weather could undo years of work.
Iowa’s milling industry reached its height when wheat was one of the state’s leading crops. By 1870, Iowa had 502 flour and gristmills, and that number rose to 713 by 1880. The peak did not last long. Depleted soil, drought, heat, grasshoppers, chinch bugs, and other problems made wheat increasingly unreliable. Iowa farmers turned toward corn and livestock, while wheat production shifted north and west. Railroads also allowed large commercial mills to ship flour over great distances, reducing the need for small local operations. During the 1880s, Iowa’s flour and gristmills declined from 713 to 441. Steam power, roller milling, and improved transportation increasingly favored larger mills, and by the end of the nineteenth century, the little water-powered mill that had helped establish so many Iowa communities was already passing into history.
The Lidtke Mill near Lime Springs is one of the few places where much of this history remains intact. Built along the Upper Iowa River in 1857, it began as a water-powered sawmill before expanding into flour production. By the early 1870s, it was producing as many as 100 barrels of flour a day. A fire destroyed the mill in 1894, but it was rebuilt as a feed mill as Iowa farmers turned increasingly from wheat to corn and livestock. Waterpower was later used to generate electricity for Lime Springs. When Herman Lidtke closed the mill in 1960, he left its rollers, grain elevators, silk bolter, fanning mill, belts, and other equipment largely as they had been. Today, the mill offers a rare look at a time when Iowa communities depended on their waterways and a mill could help build and feed the countryside around it.
