Slow to post for Slow Track Saturday, but we’re here with all kinds of goodies!

Klobasniky, browned butter cinnamon rolls, sticky buns, cookies, etc are fresh and ready for your enjoyment! Pairs great with milk from Knolle dairy…

The meat case is restocked—this is our own fresh local beef, ranch raised on our pastures right here in Ledbetter.

We continue to have the petition available for all to sign, asking for responsible development and protection of Texas ranch/farm land and area creeks and waterways—a link will also be in the comments. Please take some time to read and if this something that speaks to your heart, consider signing and sharing with others!

Fresh milk stocked🥛If you haven’t had milk fresh from the dairy before, now’s the time!

Knolle Jersey cows live on grass year round and their milk is low temp vat pasteurized. It also is not homogenized—this means you still have the yummy cream on top (just shake to blend) and has gone through minimal processing, gently warming it to 145degrees for 30 minutes then quickly cooling, knocking out harmful bacteria while keeping many of the beneficial enzymes and that fresh milk flavor.

We only have one Quesadilla Queso (con habanero) left but are restocked with fresh made Panela cheese straight from the dairy.

If you’ve never tried panela before, you’re in for a treat—this is a semisoft cheese that will soften when warmed, but not melt…if pan-fried cheese sounds tempting, then this is your cheese!! Slice off a chunk, toss it into a skillet, let it get a nice brown crust, then flip to repeat. Not responsible if you consume all the cheese before making it to the table 😁

If you’re all about unadulterated, plane-Jane, then you’ll enjoy their basic Panela (though there’s nothing basic about it!)
BUUUUUT,
If you enjoy your cheese a little more dressed up, then check out these fantastic flavor combinations:
•Dos Chiles—roasted Jalapeno and green chile**
•Chile Guajillo
•Sendero Sorpresa—roasted nopales and chile pequins

Deborah delivered more homemade jellies with homegrown figs, peppers, pears, and local grapes… This week we’ll have samples available of her Ginger Pear 🍐made with real ginger and fresh pears

Mrs. Gerline’s noodles are restocked—including her wide noodles which are perfect for a quick weeknight meal such as beef stroganoff 😋

And don’t forget we have some of her beautiful handmade quilts as well, twin size and smaller; the perfect size for a couch throw or sweet gift for a little.

Doors are open today for groceries and gifts—Tuesdays we’ll be open for general shopping; no exact hours, with kitchen closed as we’re prepping for the rest of the week.

More Knolle Dairy Farm Fresh Milk and cheeses will be arriving later today (guaranteed available tomorrow if we miss you today!)

What do you do when everyone with a vehicle leaves the house, then you go to head out and remember you don’t have a vehicle?

You do what any reasonable person would do—change course, fix a leisurely breakfast, and host a mini photo shoot of all the goodness 😁

This morning’s breakfast brought to you by Zapalac Cattle Co. (fresh eggs, and use of his coffee maker😆) and Knolle Dairy Farms, Sandia Texas (milk and cheese):
•Non-homogenized milk means you can easily add fresh cream to your morning coffee…poured not shaken😉

•Fresh eggs, topped with “Quesadilla con Jalapeño” (Grass-fed, low-temperature vat pasteurized milk filled with roasted jalapeños, it’s not called “Quesadilla” cheese for nothing—this makes the perfect snacking or melting cheese🧀)

•Bonus picture of taco salad from the other night made with a combination of Zapalac Cattle Co. ground beef and Knolle Dairy Farm beef chorizo—all grass-fed

Unfortunately I didn’t have a way to get up to Stuermer Store to add in one of JJ’s fresh baked sourdough biscuits, but she was kind enough to share a sample when I arrived—come and get some so you don’t miss out like me!

Tuesday is prep day in the kitchen and working on restocks—but we decided to open the doors for grab n go service and regular shopping!

Other than doing dough prep for the week, the kitchen is closed, but stop on by if you’re needing to grab Knolle Dairy Farms, Sandia Texas Milk, fresh local eggs, beef, honey, etc. or just want to stroll around and check out some of our new or restocks!

Doors open until 6:00 or so…looking forward to serving you!
