The Bee’s Knees was a popular Prohibition-era drink. Its name is an homage to dancer Bee Jackson, who is credited with popularizing the Charleston. Jackson’s exposed knees were the talk of Broadway and beyond. Our twist on the classic cocktail adds jalapeno for a little kick that’s sure to make you dance!

People called it “bathtub gin,” because the high-proof spirit was cut with water from their bathtub faucets. Our Southside cocktail was a favorite of Al Capone and his cohorts in Chicago’s South Side. The delicious mixture of sweet and aromatic ingredients like lemon and mint were used to hide the bathtub gin. No one was going to tell Capone that his gin wasn’t smooth — and when enjoying a Southside, there was simply no need.

The Clover Club cocktail is named for a men’s club in Philadelphia that met in the posh Bellevue-Stratford Hotel. First concocted in the 1800s, it was already a classic by the time Prohibition passed. Our version adds Lillet and Lavender for a unique twist on a positively historic libation.

We’re celebrating the repeal of Prohibition early with a classic Scofflaw cocktail!
What’s the story behind the name? A Prohibition supporter in 1923 offered $200 for the best name to pin on someone who drank illegal alcohol. Intended to bring shame, “scofflaw” won. But in 1924, Harry’s Bar in Paris defiantly used the term for a rye whiskey cocktail — an especially wry whiskey cocktail. Our version has rye whiskey, vermouth, lemon and grenadine. Available November 30–December 6.

Did you know that speakeasies often were located behind doors painted green? During Prohibition, chances were that a door painted green meant it fronted a speakeasy. In Chicago, that tradition lives on with two of the town’s well-known bars dating from the 1920s. The Green Door Tavern on North Orleans Street is an Irish pub that opened in 1921 (a bar called The Drifter, also a former Prohibition speakeasy, is tucked away in the Green Door’s basement). On North Broadway, the famed Green Mill Cocktail Lounge once was a speakeasy part-owned by “Machine Gun” Jack McGurn of Al Capone’s Outfit. Capone, also a partner in the Green Mill, used to sit in a booth that is still inside the lounge. When comedian Joe E. Lewis refused to perform at the Green Mill in 1927, McGurn sent over three men who cut Lewis’ throat and face (he survived, and Capone paid for his medical work). McGurn was initially charged in the 1929 St. Valentine’s Day Massacre, but he beat the rap due to lack of evidence.
As you make your way to the speakeasy and distillery exhibition in The Underground, Prohibition-era signs, posters and advertisements adorn the walls. Watch the making of our two large murals—one a cigarette ad featuring baseball legend Babe Ruth, the other an ad marketing Ford cars to women. These murals are the visual centerpieces of the space, which also includes a case displaying artifacts from the Prohibition period.
Raise your glass to the past, and get ready to drink what they drank – The Underground is now open! The planning and preparation for this exhibition began in 2014. Construction of this exhibition space took 10 months to complete, and now you can watch The Underground come to life in one minute through this time-lapse.
