A Tale of Two Teas: Black & White

This was a fun and insightful tasting session! We explored the unique characteristics of different black and white teas, comparing their aromas, flavors, and finish.

Among the white teas, one of the favorites was a beautiful Darjeeling white tea. It had a mild, fruit-forward, honeyed, and gently woody character. For the black teas, Lapsang Souchong emerged as the preferred tea, with its bold, smoky profile balanced by subtle sweet notes.

The different black and white teas from China, India, Vietnam, and Taiwan made every sip memorable.

It's a wrap!

Our venue may have been simple, but our experience was rich, immersive, and unforgettable. For three days, we lived and breathed tea 😅- learning, experimenting, tasting, and creating blends.

During the 3-day ITMA Certified Tea Blender Program, we worked with more than 40 different teas and tisanes and created nearly 30 different blends from traditional and cultural blends to functional and seasonal ones. Every cup became an opportunity to refine our palates, sharpen our sensory skills, and deepen our understanding of tea, flavor balance, and ingredient compatibility.

Thank you for your trust and enthusiasm, Al Semian Alethea Bancale Semian, and Monique Pereda Monique Pereda. Part 1 may be over, but the journey isn't. I look forward to seeing your continued growth as tea blenders, and to having an online toast with you when you finally get certified. Until then, keep your kettles warm and your curiosity alive.

Our final activity pushed beyond simple tasting: 8 different teas, each brewed twice, across 3 sets of parameters. Temperature, time, tea to water ratio shifted with intention. Every infusion tasted, compared, and evaluated.

What changed wasn’t just the tea. It was how we experienced it. Subtle notes became clearer. The flavor structure unfolded with more clarity, from the opening notes to the finish. The aftertaste told a longer story.

This is where knowledge becomes skill—when you realize that every variable is a choice, and every choice shapes the cup in front of you.
