新作香水のご案内
令和 8年8月18日（火）、新作香水、ディセル”夏の夜”を発売いたします。日本のみの発売になります。

夏の花咲く季節にローズ、ジャスミン、ネロリなどの瑞々しい花々の香りを集め調合しました。昼の熱が静まり、夜風が涼しさを帯びる頃、花々はひときわ深く香りだします。香りが最も美しい時間帯となります。

夏の夜
日本の夏の夜は、「静けさ」と「生命の気配」が同時に存在する時間として扱われます。
昼間には見えていた景色が闇に溶け、その代わりに虫の音や風、草花の香りが際立ちます。香りが最も美しい時間帯となります。

ディセルナツノヨは、花や木々の香りが重なり合いながら、夏の夜に満ちる静けさと、その背景にある命の気配を描いています。花は香り、風となり、やがて夜の静寂の中に溶けていきます。

香り成分には光学異性体と呼ばれものが多く存在します。これは右手と左手の関係に似ていて、分子量は同じにも関わらず片方は香りがあったり、もう片方は香りが無かったりします。

私たちは、この装置を使って香料の品質管理や偽和チェックをGC/MSと合わせて行います。

例えば、柚子に含まれるリモネンにはd体とl体の2種の光学異性体があり、柚子にはd体のリモネンが含まれます。比旋光度の数値は、d体とl体では、その数値が真逆の値になります。

d-リモネン（(R)-(+)-リモネン）の比旋光度 +99.5°
l-リモネン（(S)-(-)-リモネン）の比旋光度 -99.5°

写真にある分子模型は、薬剤であるサリドマイドの基本骨格になります。写真左は鎮静効果がありますが、右は催奇形性があるように、光学異性体は効果効能、副作用にまで影響します。

Some aroma compounds exist as optical isomers. Much like the relationship between a right hand and a left hand, these molecules share the same molecular weight yet differ in their aromatic properties—one form may be fragrant while the other is odorless.

We leverage this characteristic, in conjunction with GC/MS analysis, to perform quality control and check for adulteration in fragrance materials.

For instance, the limonene found in yuzu exists as two optical isomers—the d-form and the l-form—with yuzu specifically containing the d-limonene. The specific rotation values for the d-form and l-form are exact opposites.

The molecular model shown in the photograph represents the basic backbone of the drug thalidomide. The structure on the left produces a sedative effect, whereas the one on the right is teratogenic; this demonstrates how the structure influences everything from therapeutic effects to side effects.

バラ畑
今年のローズシーズンもほぼ終わりました。
6月初めの開花から始まった蒸留も、あと1週間ほどで無事に終えそうです。今、畑では遅咲きのハマナスやツルバラが咲いています。

Rose Fields
This year's rose season is drawing to a close.
The distillation process, which began with the blooming of the roses in early June, is scheduled to conclude successfully in about a week. Currently, late-blooming *Hamanasu* (Japanese rose) and climbing roses are in bloom in the fields.

●ハマナス蒸留
今年のハマナス畑は、再び、花が咲き出しました。例年であれば、この時期には花は終わりますが、また、多くの花が咲きだしました。今年は、少し、天候がおかしいです。

今朝は、朝早くからバラの花を摘み蒸留しました。ここでは’真空蒸留’という蒸留方法を用いています。これは蒸留器内を減圧・真空状態にすることで、室温、無酸素状態で.、水を使うことなく植物そのものの細胞水や精油、乾燥ハーブを得る方法です。

今年は、この材料を使って、バラのシロップを1ヶ月ほど前から作っています。香りと色が上手く抽出できて、バランス良く仕上がりました。これにアルコールを混ぜたらリキュール、飲む香水になります。

最近、海外の料理家やパテシエの方々から良く連絡をいただきますので、この蒸留過程をシェアします。

● vacuum distillation
Unlike in previous years, the roses in our field have started to bloom again this year. Normally, they would have finished flowering by this time, but a considerable number of them are beginning to bloom once more. The weather this year is different from usual.

This morning, I picked the roses and carried out the distillation. Here, we use a method known as ‘vacuum distillation’. By creating a vacuum inside the still, we can extract plant cell water, essential oils and dried herbs without using water, in an oxygen-free environment at room temperature.

For the past month or so, I have been using these ingredients to make rose syrup. The resulting syrup has a beautiful fragrance and colour, and its flavour is exquisitely balanced. When mixed with alcohol, it becomes a liqueur – essentially ‘drinkable perfume’.

As we have recently received numerous enquiries from chefs and pastry chefs around the world, I would like to take this opportunity to share more details about this distillation process.
