Sparkling wine undergoes a second fermentation in the bottle!
🥂 the wine is made and bottled - this sparkling is made from 100% Pinot noir- and then more yeast and sugar is added to the bottle. The yeast eats the sugar and converts it into CO2 and alcohol. The CO2 is trapped in the bottle and the dead yeast cells give the wine aromas of brioche and toast. The neck is frozen, bottle cap popped off, and the frozen plug of lys is expelled. A dosage is added and the bottle is corked!
🥂 If you choose champagne, it is also made in the traditional method. Champagne is made in the Champagne region of France and is made from Chardonnay, Pinot Noir, and Pinot Meunier.
🥂Another, less labour intensive, way to make sparkling wine is the tank method, or Charmant method. This is how prosecco is made. The wine is made -in the Valdibbiadene example here- from Glera grapes. More sugar and yeast are added to the tank and the tank is sealed, trapping the CO2. When the winemaker is happy with the sugar and alcohol levels, fermentation is stopped and the wine is bottled under pressure. Prosecco has more fresh fruit aromas and flavours due to less proximity to the dead yeast cells, or lys.

The Brie will pair well with the Chardonnay and the spicy cheddar will be perfect with the Gewurtztraminer!
Smoked Gouda is a great pairing for Shiraz and manchego cheese is delicious with Rioja!
🥓 6 different meats from prusciotto to Parmesan salami and Calabrese! All the meats will pair the Rioja and the Shiraz!

This charcuterie board has a variety of pickles, jams, fruits, and crackers.
And it looks beautiful!

Same grape. Same blue-grey skins. Two completely different personalities. 🍇

Pinot Gris and Pinot Grigio both come from the same grape — a dusky blue/grey variety. When making white wine, the skins are pressed off right away, so only the juice is fermented. What changes everything? Climate and harvest timing.

🇫🇷 Pinot Gris – Alsace, France
Grown in a cooler climate and harvested fully ripe, resulting in a richer, slightly sweeter style.
Full-bodied, sometimes creamy (especially if barrel fermented).
Flavours of lemon, cinnamon, and honey.
Perfect with creamy pasta and dense cheeses. 🧀🍝

🇮🇹 Pinot Grigio – Alto Adige, Italy
Harvested earlier for freshness and lower alcohol.

Enjoying wine in South Africa!
The red is a Shiraz from Franschhoek Cellars. We will be visiting there next week!
It has notes of plum and blackberries and pairs very nicely with sitting on a patio watching it rain in Kruger National Park!
The white is a Chenin Blamc/sauvignon blanc blend from Swartland region. It has notes of guava, grapefruit and lemon.
An interesting note is that in South African restaurants wine is served with a bowl of ice! I asked what it was for and the waiter explained, “to keep the whites cold and to water down the alcohol in reds.”
I have yet to try the “ice in wine” tradition!
