Spicy Beef Skewers with Chimichurri Sauce
Ingredients:
For the Beef Skewers:
1.5 pounds beef sirloin or ribeye, cut into bite-sized pieces
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce (such as Sriracha)
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
Wooden skewers, soaked in water for 30 minutes
For the Chimichurri Sauce:
1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
3 cloves garlic, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and pepper to taste
Directions:
For the Beef Skewers:
In a large bowl, combine the olive oil, soy sauce, Worcestershire sauce, hot sauce, minced garlic, smoked paprika, ground cumin, black pepper, and salt. Add the beef pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Preheat your grill to medium-high heat. Thread the marinated beef pieces onto the soaked wooden skewers.
Grill the beef skewers for 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness.
For the Chimichurri Sauce:
In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, dried oregano, red pepper flakes, salt, and pepper. Mix well and let sit for at least 10 minutes to allow the flavors to meld.
To Serve:
Serve the spicy beef skewers hot with a side of fresh chimichurri sauce. Garnish with additional fresh herbs if desired.
