Wet chemical fire extinguishers are designed to fight class F fires (fires involving cooking oils that have self ignited due to excess heat) e.g a chip pan left unattended.
The stainless unit is one of a few early models imported from the US by Chubb. The cylinder is a "Badger" unit with a rather crude lance added. These are rare to find and reflect how manufacturers were using existing kit to bodge something together! Chubb also had a prototype unit with a green label that utilised their 80s foam lance but these are extremely rare and as far as I am aware nobody has actually seen one in person!
The red Chubb is a modern painted/stainless unit commonly found in commercial kitchens and shows how Chubb progressed into a decent mass produced unit.
The lance is essential to ensure the user can keep a safe distance from the burning oil. The nozzle produces a fine spray to ensure the oil isn't dispersed and remains in the fryer/pan.
