Fun fact: Chicago's first modern-day vegetarian food business, the Bread Shop, opened fifty years ago, the same year that the Union Stock Yards closed! The Bread Shop included a bakery, grocery store, and restaurant; the restaurant continues operation today as the The Chicago Diner!

Chicago’s meat-packing industry ingrained itself into history and popular culture. But, Chicago also has strong roots in the national vegetarian movement, dating back to the 1893 World’s Fair. That’s when the Third International Vegetarian Congress met and the Vegetarian Society was established, growing from a single branch with five members, to one of the largest Vegetarian Societies in the U.S. With 68% of land in Illinois categorized as prime farming soil, the state is poised to both produce and lead the use of crops central to a vegetarian diet. In partnership with Native Foods National Vegetarian Museum and at DePaul University this map traces the history of vegetarianism, from its roots in India and Ancient Greece to its important place in the history of Illinois. A presentation of the map will take place Nov. 23 at Independence Library, 4024 N. Elston, from 1-3 pm.
