Provenance At The Cleveland Museum Of Art

Provenance Café, and Catering by Provenance, is a three-pronged dining concept created through an ongoing partnership between the museum, Bon Appétit Management Company, and celebrated chef Douglas Katz. The name “Provenance” is derived from the French provenir, meaning “to come from.” The word refers to the chronology of ownership pertaining to a historical object or work of art. but can also be used when describing the origin of food—particularly food from local sources. Provenance, Provenance Café, and Catering by Provenance marry the concept of locally sourced foods with the lineages of nearly 45,000 objects in the Cleveland Museum of Art’s collection.

MEET OUR PANELIST Chef Douglas Katz --

Douglas Katz is the innovative chef partner of Provenance, Provenance Café, and Provenance at the Cleveland Museum of Art.

Chef Katz utilizes traditional pieces of equipment from around the world, such as the tandoor oven used in India to create delicious dishes with quality and flavorful ingredients. His creations employ a renowned food system that is sustainable, healthy, and local.

Chef Katz is also the owner and executive chef of fire food and drink at the historic Shaker Square and CEO of Fire Spice Company, a recipe and spice company launched in 2015. He developed two new concepts in 2019 - chutneyb.vad opened in the Van Aken Market Hall in June 2019 and Zhug is slated to open to Cedar Hill in Cleveland Heights in November 2019.
