之前常被問到:你的巧克力是不是比你的甜點厲害?
我的回答都是:沒有,甜點也一樣厲害
對方說:但是你的巧克力有得獎耶⋯⋯所以巧克力應該比較厲害呀⋯⋯
我個人認為,有沒有得獎不是全部,對於消費者重要的是了解如何品嘗與培養味蕾,並給產品一個機會。這也是為什麼會辦講座的原因。
老實說這次甜點受到英國國際食品評比Great Taste的肯定,心情是複雜的。十幾年的甜點師職涯讓我累積了不少經歷和對配方與味道的講究,雖然一直都對自己的產品很有信心,但是如果沒有食品評比的加持,是很難被消費者看到的。之前曾經提到,有太多看起來一樣吃起來差很多的東西;或是有些人直接打槍說只吃著xx牌的,其它不試;又或者被嫌棄,怎麼烤那麼黑⋯能吃嗎⋯

This year after receiving Great Taste awards for my bakes, I had mixed emotions.
I am happy for the recognition, but at the same time I know my products aren’t easy to sell, even with the accreditation. For one, canelé and palet breton are niche products, not many people have tried it or know what it is supposed to taste like. As for financiers, many people might think it is just like any supermarket bought cake, why pay a premium? This is the reason why I host tasting seminars, and am passionate about giving consumers the chance to taste these products and understand what goes in to making them.
After KANMI Chocolate (oriental fusion chocolates), I have again gone down the unconventional route and launched The Little Oven .uk, for creating specialty bakes, to share their unique and amazing tastes. Being a professional pastry chef and chocolatier for more than ten years, I am confident in every one of my recipes. Yet, my products have been rejected numerous times simply for not being a well known product type. This can be tiring and discouraging.
