This June, we’re bringing the Shincha season to Munich.

Together with .gallery I’m hosting two Shincha tastings and a Sencha Masterclass as part of the opening weekend of TOKONAME — an exhibition of over 100 teapots by five artisans from Japan’s most famous teapot origin.

The tea picking season has started
and I am exactly where I want to be.

While most people gobble down their matcha lattes,
I take great comfort in knowing that there are still tea farms in Japan that stay true to their heritage,
adamantly defying trends and bravely leading the way to a more inspiring future.

Farms like these always had, and always will,
have my genuine support.

Anyone who’s ever seen the French movie
Amélie (Le Fabuleux Destin d’Amélie Poulain),
probably remembers Audrey Tatou cracking
the surface of her crème brûlée,
seemingly with a lot of satisfaction.
Lovers of that classic dessert can relate for sure.

What is even more satisfactory,
although admittedly less known,
is how stem hōjicha exquisitely
enhances the caramel flavors,
making the crème brûlée taste
even better!

Along the same lines,
I also recommend everyone trying
crema Catalana with stem hōjicha.
If you can read Japanese, you’ll find
the details in the March issue of
“Eiyō to ryōri”. In case you don’t have
time to study Japanese, don’t despair.
A version in English will be published
later this year☺️

The Lucia celebration is one of the most cherished traditions in Sweden. Although I didn’t dress up in a white gown and sing myself this year, at least I baked some saffran flavored buns (lussekatter) to get in the mood in my Tokyo apartment. Glad Lucia🕯️
