When I visit an izakaya in Fukui during winter, there’s one dish I simply can’t resist: Raw Shirako with Ponzu sauce.
What is "Shirako"? Well, it might surprise you—it’s actually fish milt (usually from Pacific Cod). In Fukui, we call it "Dadami."
While Shirako is common across Japan—often served as crispy Tempura—eating it completely RAW is a true luxury that you can only experience in places like Hokuriku. Because freshness is everything, most restaurants in big cities have to boil or fry it. But here in Fukui, the quality is on another level! ❄️
